Historical Background

As a suffix, "-ite" diminishes the word, so, Grimmonite is a small grimm, like Nebimonite is a small nebimon. Interestingly, both roots share the sams suffix "-mon" (short for "monster" in Digimon), the same nautilus mollusk icon model, and bite on the same bait. A grimmon is a dragon in Digimon, and the "Grimm Dragon" is in the anime RWBY. So, a grimmonite is a small dragon. In Chinese culture, the dragon controls water, and is represented by the shrimp in the Chinese dish "Dragon Meet Phoenix" (coupled with chicken).

When looking at its Eastern analog, the Ahtapot, it comes from the Turkish word for octopus. Note the animal in the image is a nautilus, and not an octopus, though.
