Historical Background
Cassia (Cinnamomum aromaticum) is a small tree native to southern China & Southeast Asia. The bark of the cassie tree, like that of the cinnamon tree, is used as a spice. Cassia's flavor is weaker than that of cinnamon and as a result, cassia is cheaper than cinnamon and often called "bastard cinnamon". Cassia bark can be distinguished from cinnamon bark by its color (cassia is light to medium reddish-brown), texture (cassia is harder and more woody, cinnamon is light, fine, and crumbly). Most of the cinnamon marketed in North America is actually cassia.
